Beef and Barley Stew
To be perfectly honest, I tried beef stew 4 different ways before I landed on this recipe. It wasn't pretty. I wasn’t a huge fan of broccoli in my soup, and I ruined an entire pot of soup because my meat was freezer burnt. (Noooooooooo!) Learn from my mistakes!
For this batch, I went the super low-maintenance route and put everything in the crockpot uncooked. If you have time, it never hurts to brown your meat and veggies. It adds so much depth to your soup! But, if time is not on your side, I think it still tastes delicious this way! So, without further ado, I present my favorite beef stew recipe!
- Chopped Chuck Roast
- Beef Stock
- Carrots
- Squash
- Onion
- Garlic
- Thyme
- Bay Leaves
- Kale
- Mushrooms
- Tomato
- Pearled Barley
- Black Pepper
Toss everything but the barley in the crockpot on low for about 6 hours. For the last 1-2 hours, add in your barely and let it soak up lots of that delicious beef broth!
