Lemon roasted chicken and cauliflower
This winter I started marinating chicken overnight in lemon juice…and it was an instant hit. Put a whole chicken and the juice of 2 lemons in the fridge overnight. I use a ziploc bag. 2 hours before you are going to cook, pull out your chicken to season and come to room temp. This also allows the chicken skin to dry out so it gets perfectly crisp. I went with the basics - salt, pepper, garlic and onion. I put the chicken on a roasting rack, but before I put the roasting rack in the roasting pan I layered cauliflower steaks on the bottom of the pan. I set the chicken on top and baked it all at 350° until the chicken registered 165°. The cauliflower was perfectly roasted on the bottom and fell apart in your mouth. Give it a try!
