Oven Baked Chicken

Oven Baked Chicken

This chicken baked for a hour and 45 minutes at 375 degrees. The brussels sprouts and carrots were in there the whole time, and came out perfectly cooked and browned.

Ingredients:

  • 1 whole Chicken

  • 3 cups Brussels Sprouts

  • 4 whole Carrots

  • 6 Tbsp Ghee

  • 1 Tbsp Thyme

  • 4 sprigs of Rosemary, 1 chopped

  • 3 Tbsp Garlic

  • Green Onion

  • Juice of 1 lemon

  • Himalayan Sea Salt

  • Fresh cracked pepper

  • Costco Organic No Salt Seasoning

Directions:

Rinse your whole chicken off and pat dry. I left the giblets and neck inside for flavor. Juice your lemon first. Put your lemon rinds, 3 whole sprigs of rosemary and 1-2 tablespoons of garlic in the cavity of the chicken. Mix the ingredients above. If the skin on the breasts easily separates from the breast meat, stuff about 2 tablespoons of the ghee seasoning mixture in each breast -under the skin, above the meat. Pour the remainder of the ghee seasoning over the veggies and whole chicken.
